In our quest for improvement and continuous improvement in this vintage we set a new challenge, to develop a high-end wine. The same should be much higher than the already well developed to be the ultimate expression of our good work.
To this end our vineyards have been selected more elderly aged over 60, whose production and berry sizes have been limited by soil, climate and their own forces.
Of them have selected some of its clusters, that upon his arrival to the winery has been shelled manually and incubated in new French oak barrels for fermentation carbonic, also called whole grape fermentation in the barrel itself which also made its fermentation once malolactic has trodden this grape.
